Earlier this year, my sister-in-law made these absolutely delicious cookies. They are the perfect sweet treat and combine chocolate chips, shredded coconuts and almonds. What more could you ask for in a cookie?
This recipe does make a really big batch of cookies so they are perfect for a celebration, to share with others, or to freeze. You could also cut the recipe in half if you’d like!
Ingredients:
1 C butter, softened
1-1/2 C granulated sugar
1-1/2 C brown sugar
4 eggs
1 Tbsp vanilla
4-1/2 C flour
2 tsp baking soda
1 tsp salt
4 C mini chocolate chips
2 C coconut flakes
2 C chopped almonds
Preheat the oven to 375°. Lightly spray cookie sheets or line with parchment paper.
Combine flour, baking soda, and salt in a bowl and set aside. Cream together the butter and sugars. Add eggs one at a time. Add the vanilla. Gradually add the flour mixture. Add the chocolate chips, coconut and almonds.
Drop by rounded tablespoonfuls onto cookie sheet. Bake 8-10 minutes and transfer to cooling racks.
